This fall I am going to assign a unique SARS-CoV2 protein to each student in my biochemistry 1 undergraduate glass. Most assessments will be based on it (e.g. calculating the isoelectric point, describing its molecular structure, any glyocosylation or other modifications, binding, etc). I used this assignment as my final exam last spring after going online, and experiencing a great amount of CHEGG cheating on a midterm. It gave my students a more real learning experience, and it stopped the cheating. I think that in future years I will keep doing this with other metabolic systems or organisms.
